DIY Friday {Thai Coconut Curry Soup}

Guys, I am really proud of the accomplishment of this soup. I combined a few different recipes and created my own version of a Thai Coconut Curry Soup and it was DELICIOUS! I thought I would share it with you!

What you need:

  • 1/2 yellow onion diced
  • coconut oil
  • 2 potatoes peeled and cut small cubes
  • 1 tsp fish sauce
  • 4 tsp. Red Thai Curry Paste (or more for some spicy kick)
  • 1 tbs lime juice
  • 4 cups of chicken broth
  • 1lb of chicken boiled and shredder
  • 1 can of coconut milk
  • salt
  • ginger
  • 1 hand full of cilantro leaves
  • Optional: thai chili pepper if you can find one.

Directions:

  1. Place chicken in pan and add water until chicken is covered. Place on high heat and boil until done. Shred with fork and set aside.
  2. in large pan with lid, cover bottom of pan with coconut oil and add onions. Cook until translucent. Add the potatoes, finely chopped chili pepper if you choose and about a cup of the broth. Cover and let cook for 4 minutes. 
  3. Add red curry paste and still in until mixed. Add the chicken, rest of broth, a pinch of salt, a sprinkle of ginger and the coconut milk. Still unitl well blended. Then add the fish sauce and lime juice and mix in. 
  4. Cover and let simmer for about 20 minutes. Add the cilantro before serving.
  5. Serve with rice, and ENJOY!
